No Chill Roll Out Sugar Cookies (These are really wonderful, the kids will love them!) 1 c. butter softened 1 c. sugar 1 egg 1 tsp. almond flavoring 2 tsp. baking powder 3 c. flour Cream butter and sugar in mixer. Beat in egg and almond flavoring. Add baking powder. Slowly add flour, if you add it all at once you will have “flour dust” all over your kitchen. The dough will be stiff. Divide dough into two sections and roll out on a floured surface. A marble cutting board is good, or if you have granite, marble or avanza counters, clean them really well and just roll directly onto counter. Roll approx. 1/8” thick. Dip cutters in flour before cutting out each shape. Bake on lightly greased cookie sheet at 400 degrees for 6-12 minutes, depending on cookie size, or until light brown and you can smell them. Buttercream Decorator Icing 2/3 c. water 4 T. meringue power 11 c. of powder sugar (add more if it seems too wet) 1 1/4 c. Crisco 2/3 tsp. salt 1 tsp. almond extract 1/2 tsp. butter extract (or you can omit if using butter flavored Crisco) Combine water and meringue powder. Whip until peaks form. Add 3 1/2 c. sugar, beating at low speed to avoid a powdered sugar fog. Alternately add sugar and Crisco. Add salt and flavorings. Beat until smooth. You can store this frosting for up to 2 weeks in the fridge. Add food colorings as desired and let your inner artist play! Pumpkin Cheesecake 1 c. graham cracker crumbs 1/2 c. pecans finely crushed 6 tbsp. butter, melted 3 (8 oz.) pkgs. cream cheese, room temperature 1 c. brown sugar, firmly packed 4 lg. eggs 1 lb. can solid pack pumpkin 1/2 c. whipping cream 1/2 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. ground cloves 2 tbsp. spiced rum Blend graham cracker crumbs, pecans, 1/4 cup sugar and the butter in medium bowl. Press crumb mixture in bottom and up sides of 9 inch springform pan. Chill. Preheat oven to 325 degrees. Using electric mixer, beat cream cheese in large bowl until smooth. Mix in remaining 3/4 cup sugar and brown sugar. Add eggs, one at a time, beat until fluffy. Blend in pumpkin, cream, rum and spices. Pour into crust. Bake about 1 1/2 hours until center no longer moves when pan is shaken or a toothpick comes out clean when inserted in the center. Cool. Cover and chill overnight. Serve with whipped topping. Cheese Log 2 (8 ounce) packages cream cheese, softened 3 tablespoons salsa 1 tsp. garlic powder 1 cup finely chopped pecans 2 cups shredded Sharp Cheddar cheese Chili powder to coat Combine cream cheese, shredded cheese, salsa, chopped pecans and garlic powder. Mix until well combined, then shape it into a log (use wax paper to help roll it). Cover log with chili powder. Wrap wax paper around it, put it in a baggie and refrigerate the log until you are ready to serve it. Serve with your favorite cracker. Festive Shrimp Dip 2 (8 oz.) packages of cream cheese 1 package of Knorr Vegetable soup mix 1 small bottle cocktail sauce ½ lb. cooked cocktail shrimp, deveined (or you can cut larger shrimp into small pieces) Soften cream cheese to room temperature. Mix with the soup mix. Line a small bowl with plastic wrap and place mixture inside. Refrigerate. Invert onto a pretty platter and remove plastic wrap. Refridgerate a few hours to let flavors distribute. Before serving. Create an indentation into the middle of your dome of dip and add cocktail sauce, then place shrimp on top and scatter around the plate. Serve with Ritz or butter crackers. Beef Chili 2 lbs. hamburger 1 medium onion chopped 1 sm. green or red pepper chopped 1 can diced tomatoes 1 can tomato juice 1 can black beans 2 cloves garlic ½ c. chili power, more or less…to taste 2 tsp. cumin powder 2 tbsp. onion powder 1 tsp. salt (to taste) 1 tsp. ground pepper Brown hamburger and drain excess fat. Add chopped onion, green pepper, salt and garlic. Once the vegetables are opaque, add diced tomatoes. Then add juice and dry ingredients. Let simmer for 5 minutes and add black beans (you may omit beans or use the kind you like). This is great to put in the crockpot on Christmas Eve and let everyone eat as they please. Have bowls of shredded cheese, pickled jalapenos, minced onion and sour cream as condiments. Offer saltines, tortilla chips or Fritos as dippers and crumblers. Clamato Mary 1 container Clamato juice 1 can beef consume’ 1 sm. can spicy V-8 2 tbsp. worcestershire sauce Dash Tabasco 1 tsp celery powder 1 tsp garlic powder Black pepper to taste 1 tsp lemon or lime juice Mix all of the ingredients together and chill. Add your favorite brand of vodka in your desired amount. Pour into a pretty glass and add a celery stalk or green olives with pimento. We have these for New Year’s Eve. Crockpot Beef Stew 1 1/2 pounds cubed beef sirloin 1/4 cup all-purpose flour salt and pepper to taste 2 cups beef broth 1 1/2 tablespoons worcestershire sauce 1 onion, chopped 3 carrots, sliced 2 stalks celery, sliced 2 potatoes, cubed 1/2 pound mushrooms, sliced 2 cloves garlic, minced 1 bay leaf Place beef stew meat into a slow cooker. In a small bowl, mix together flour, paprika, salt, and pepper; sprinkle over beef stew meat, stirring to coat. Stir in beef broth, teriyaki sauce, onion, carrots, celery, potatoes, mushrooms, garlic and bay leaf.
